Maple Syrup Grades — Golden, Amber, Dark, Very Dark

All pure Adirondack maple syrup is graded by color and taste — never by quality. Every grade is 100% pure maple, made from sap to syrup with nothing added. The difference is when in the season the sap was tapped, which changes the flavor from bright and delicate (early) to rich and bold (late).

GOLDEN — DELICATE TASTE

Lightest in color · Mild, subtle taste with a hint of vanilla

Tapped at the very start of sugaring season, when the sap runs clear and the days are still cold. Golden Delicate is the maple syrup connoisseur's syrup — the one chefs reach for to drizzle over fresh fruit, yogurt, or a soft farmer's cheese. It's also the right pick for cocktails, ice cream, and anything where you want to taste maple but not overpower.

AMBER — RICH TASTE

Slightly darker than Golden · Balanced sweetness with a fuller maple flavor

Our most popular grade, and for good reason. Amber Rich hits the sweet spot — pronounced maple flavor without being too bold. It's what most people picture when they imagine "good Vermont (or Adirondack) maple syrup." Pour it on pancakes and waffles, drizzle it over roasted root vegetables, glaze a salmon fillet, or sweeten your morning oatmeal.

DARK — ROBUST TASTE

Deeper amber color · Robust maple flavor with hints of caramel

Tapped later in the season, when the sap has more minerals and the boil produces deeper caramel notes.
