Maple Rosemary Roasted Almonds
Snacks · 25 min · Serves 6 · Easy · Best with Amber Rich maple syrup
Crunchy whole almonds tossed in maple syrup, fresh rosemary, and flaky sea salt, then roasted until glossy and golden. A savory-sweet snack that disappears fast at gatherings.
Ingredients
- 2 cups raw whole almonds
- ¼ cup Amber Rich maple syrup
- 1 tablespoon olive oil
- 1 ½ tablespoons fresh rosemary, finely chopped
- ¾ teaspoon flaky sea salt
- ¼ teaspoon freshly ground black pepper
- Pinch of cayenne pepper (optional)
Method
- Preheat oven to 325°F and line a rimmed baking sheet with parchment paper.
- In a medium bowl, whisk together the maple syrup, olive oil, rosemary, salt, black pepper, and cayenne.
- Add the almonds and stir until they’re evenly coated.
- Spread the almonds in a single layer on the prepared baking sheet.
- Roast for 18–20 minutes, stirring every 6 minutes, until the syrup is bubbling and the almonds are deeply golden.
- Cool completely on the pan — they’ll crisp as they cool. Break apart and store in an airtight container at room temperature for up to two weeks.
| Tip: Amber Rich maple syrup gives just enough caramel depth to balance the rosemary without overpowering the nuts. Don’t skip the parchment paper — the syrup turns to candy as it cools and will weld to a bare pan. |
