A quick weeknight stir fry with a sticky maple-ginger sauce that beats takeout every time. Ready in under 30 minutes.
Ingredients
- 1½ lbs boneless chicken thighs, cut into bite-size pieces
- 3 tbsp pure maple syrup (Amber Rich)
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 tsp fresh ginger, grated
- 2 garlic cloves, minced
- 1 tbsp cornstarch mixed with 2 tbsp water
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 2 green onions, sliced
- Sesame seeds for garnish
- Cooked rice for serving
Method
- Mix maple syrup, soy sauce, rice vinegar, sesame oil, ginger, and garlic in a bowl. Set aside.
- Heat a large skillet or wok over high heat with a tablespoon of oil.
- Cook chicken in a single layer, 4–5 minutes until golden. Remove and set aside.
- Add broccoli and bell pepper to the pan. Stir fry 2–3 minutes until crisp-tender.
- Return chicken to the pan. Pour the maple-ginger sauce over everything.
- Add the cornstarch slurry and stir until sauce thickens and coats everything, about 1 minute.
- Serve over rice. Top with green onions and sesame seeds.
| Tip: Amber Rich maple gives the sauce a warm sweetness that balances the ginger and soy perfectly. Use chicken thighs instead of breasts — they stay juicier. |
