Maple Herb Grilled Lamb Chops

Dinner · 40 min · Serves 4 · Medium · Best with Amber Rich maple syrup

Juicy lamb chops marinated in Amber Rich maple syrup with rosemary, thyme, and garlic, then seared to a beautiful caramelized crust. A showstopper for spring entertaining.

Ingredients

  • 8 lamb rib chops (about 2 lbs)
  • ¼ cup Amber Rich maple syrup
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp Dijon mustard
  • 2 tsp balsamic vinegar
  • 1 tsp salt
  • ½ tsp black pepper
  • Flaky sea salt for finishing

Method

  1. Whisk together maple syrup, olive oil, garlic, rosemary, thyme, Dijon, balsamic vinegar, salt, and pepper in a bowl.
  2. Place lamb chops in a shallow dish and pour marinade over them, turning to coat. Refrigerate 30 minutes (or up to 4 hours).
  3. Remove lamb from the fridge 15 minutes before cooking to take the chill off.
  4. Heat a grill or cast-iron skillet over high heat until very hot.
  5. Sear lamb chops 3–4 minutes per side for medium-rare (internal temp 130°F), or longer to your preference.
  6. Transfer to a cutting board and rest for 5 minutes — this keeps the juices inside.
  7. Finish with a pinch of flaky sea salt and a small drizzle of fresh maple syrup before serving.
Tip: Amber Rich maple syrup has the depth to stand up to lamb’s bold flavor without overpowering the fresh herbs. The natural sugars help create that gorgeous caramelized crust on the grill.
