Today it stands as the largest maple operation in New York State, producing more than 50,000 gallons of pure organic maple syrup each year. A Family Arrives from Canada
In 1884, Adolphus and Amelia Parker left their home just across the border in Canada and settled in West Chazy, a small town in Clinton County on the northern fringe of the Adirondack Mountains. They purchased 61 acres — one for their home, and sixty for a dairy farm and a sugaring operation.
It was a modest start. But the land was right, the trees were right, and the Parkers were the kind of people who understood both. By 1889, their maple operation was formally established, and the Parker name had taken root in the North Country in more ways than one.
What Adolphus and Amelia built over a century ago is now in its fifth generation of family stewardship — more than 100,000 taps and a reputation that stretches well beyond the Adirondacks.
Five Generations, One Farm

The farm grew from Adolphus and Amelia's original 61 acres over decades of patient investment. The taps went from a few hundred to tens of thousands. The sugarhouse grew. The product line expanded. But the family ownership never changed.

A Season Like No Other
Maple sugaring is one of the most demanding and rewarding windows in farming — typically just six weeks between late February and early April when the temperatures swing from freezing nights to warming days, coaxing sap up through the trees. On a 100,000-tap operation like Parker's, that window means around-the-clock work: collecting sap, running the evaporators, boiling it down, and bottling it before the season closes.
It takes roughly 40 gallons of sap to produce a single gallon of pure maple syrup, which means the Parkers are processing enormous volumes of sap during those six weeks to reach their 50,000+ gallon annual output. The scale is extraordinary — but the quality is treated with the same care you'd expect from a family farm on its first batch.
